Avocado & Greek Yogurt Dip

Every year when summer rolls around, I'm re-inspired to eat healthier and savor all of the produce that's in season, which tastes even better than it does any other time of the year. My mom recently introduced me to an amazing dip that's so light and refreshing--perfect to enjoy on a warm summer evening with family and friends! And best of all, it features one of my favorite fruits (which is weird because I don't consider it to be a fruit, but technically it is....anyways) the avocado! Trust me, once you try it, you won't be able to stop eating it! 

Here are the ingredients you'll need (*I usually cut these amounts in half when sharing with 2-4 people because it does make a lot! If you have a larger group of people, then follow the instructions below)

2 scallions, cut into 4 pieces, 2 ripe avocados, seeded, peeled and cut in half, 1 1/4 cup Greek yogurt (I use Fage), 2 tbsp grated Parmesan cheese, fresh lemon juice from 1 lemon half, 1 tbsp plus 1 tsp reduced sodium soy sauce, 1/2 tsp garlic powder, freshly cracked black pepper, 1 10 oz package of frozen chopped spinach (thawed, squeeze out moisture)

Step 1. 

Finely chop scallions in a food processor. Add in the avocados, yogurt, parmesan cheese, lemon juice, soy sauce, garlic powder, and pepper. Puree in food processor until smooth. You might need to push some of the avocado chunks down half-way through if they aren't blending completely. 

Step 2. 

Next, add in the thawed spinach and pulse until it is incorporated throughout the dip. Pour mixture into a glass bowl and cover with saran wrap. Place in the refrigerator for 1-3 hours before serving. 

Step 3. 

Now you're ready to enjoy! Serve with blue corn tortilla chips (my fave) or with carrots, bell peppers, or any other vegetable of your choice! I can't wait to see what you think of this easy and healthy summer appetizer! Let me know your thoughts in the comments :) Have a great Thursday!
