Lemon Poppyseed Pancakes
You know what they say, "Breakfast is the most important meal of the day", and I couldn't agree more. So much so, that even if its noon and I haven't had breakfast yet, I refuse to eat lunch until I have at least an egg or yogurt! It's my favorite meal of the day, and I definitely am willing to eat it at any time of the day. One of my favorite classics I grew up on was lemon poppyseed muffins, especially with melted butter when they are warm right out of the oven. So when I came across this recipe on Pinterest for lemon poppyseed pancakes, I instantly wanted to try them! It's a simple recipe that takes about 20 minutes to prep, and they taste incredible!
I'm usually not one to make things from "scratch" (I've always opted for a pre-made waffle or pancake mix), but these were honestly so easy to whip up in such a short amount of time that I plan to make this a staple breakfast dish in our home for many years to come! INGREDIENTS
Dry Ingredients
- 3/4 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1/3 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet Ingredients
- 1 cup buttermilk
- zest of two lemons
- 1/4 cup fresh lemon juice (about 2 lemons)
- 3 Tbsp butter, melted
- 1 egg
- 1 1/2 tsp vanilla extract
- 1/3 cup poppy seeds
