Power Breakfast: Baked Avocado Eggs

If you're like me and have been eating way too many Thanksgiving leftovers this past week, then this recipe should hopefully come as a breath of fresh air! I've been craving something light and healthy but packed with protein, and these baked avocado eggs hit the nail on the head. Plus, they're super simple to make and take hardly any time at all! 

Preheat your oven to 425 degrees and line a baking sheet with aluminum foil--this will make your clean up so much easier! Simply cut one avocado in half, and spoon out about half of the meat (enough to crack your egg inside). Crack an egg into each avocado half. Don't be alarmed when the whites spill over, this is why the foil is in place :) Juice one lemon half over both avocado halves and season with salt and freshly cracked pepper. Let them bake for 15 minutes and then you're ready to enjoy!
